AJO BLANCO

Spanish, chilled soup, loaded with garlic and a vibrant twist, refreshing.

Serves 4

Prep & cook time: 20 minutes

Difficulty: Easy

Ingredients:

• 2 Garlic cloves, processed

• 1/2 C Almonds, soaked and skinned

• 2 Bread slices (preferably white)

• 50 ml Olive oil

• 2 T Balsamic dark

• 4 – 5 C Iced water

• Grapes to garnish (green, seedless)

Method:

• Process garlic and almonds together.

• Add bread, quick blitz.

•  Add olive oil and balsamic, process.

• Add iced water, process and check for desired consistency. Serve, garnish with halved sliced grapes.

Note: Serve chilled.
