GAZPACHO

Chilled Spanish traditional soup, slightly spicy.

Serves 4

Prep & cook time: 30 minutes

Difficulty: Easy

Ingredients:

• 3 Garlic cloves, blended in food processor
• 1 Chilli if you like it spicy
• 1 Slice of bread (optional but will make soup more creamy)
• 1 Cucumber peeled & seeded
• 1/2 Red pepper
• 8 Tomatoes, boil to peel and remove seeds
• 1 Cup Olive Oil
• 1 T Apple cider vinegar
• Salt & pepper to taste

Method:

• Blend above ingredients together, in the above order
• Allow to chill in freezer until desired temperature is reached

For Garnish:

• Croutons
• Onion chopped
• Peppers chopped
• Cucumber chopped
• Tomato chopped & chilli flakes

Note: Allow to chill before serving.
