BASIC ‘EGG’ SCRAMBLE

We’re loving that you are asking us about our speciality delivery meals, and taking interest in healthy eating or something different from the usual mundane stuff so, upon request regarding last nights ‘egg’ fried rice, here’s the basic egg scramble recipe for you to try! You can have this for breakies, or zing it up with shroomies, sundried tomato, onion or, what ever your heart desires!

High in healthy protein – let the magic begin with tofu. Tofu is pretty tasteless on it’s own but when you add that magic, the magic begins! We buy our tofu at Asian markets for fraction of price of ‘eggs’. Tofu is also heart healthy in that it carries no cholesterol but packs punch in healthy protein, and we do wish you good health always and, want your vegan experience to be easy, delicious, healthy, and cost effective!

Tofu makes for a fantastic egg alternative.

Serves: 2

Prep time: 15 minutes

Difficulty: Easy

Ingredients:

• Tofu, 2 blocks with juice, mush with fork in the pan

• 1/2 t Turmeric

• 1/2 t Paprika

• 2 t Black salt

• 1 T Coconut oil

Method: 

• Add all to pan except coconut oil (add this last to give it another dimension), heat, mush, mix, as you would any scramble until desired consistency is reach (runny or hard – which ever you prefer), then serve with your favourite condiments IE, on toast with Worcestershire sauce, HP, ketchup etc. You can add whatever else you normally add to scramble. Also lovely mixed with brown fried rice, Asian dishes and so on.
