– Upon request & by popular demand The Vegan Rendition of The famous South African dish is back. Four animals flesh are emulated (cow, ostrich, lamb & pig) –  our ‘meat’ is clean, no one gets hurt, all ingredients are plant based, 100% vegan. We have added flax seed ground and swapped over to almond milk) – great omega for brain health. Our bread is stone ground based & made with 5 ingredients – no preservatives. S/w yellow rice & salad

Recipe -Thursday Pasta Salad Xalapa

– Chilled fusilli tossed with greens, coated with tangy Jalapeno dressing, topped with smoked coconut & almond  flakes

Evening #dinners gone by. •  Do join us for #Salad  on Thursdays, always gorgeously exciting ! – Pasta Salad Xalapa three weeks ago – Chilled fusilli tossed with greens (green beans, broccoli), coated with tangy Jalapeno dressing (jalapeno, olive oil, salt, baby spinach leaves –  blitz, taste, adjust),  top with smoked almond & coconut flakes (you can bake on tray lined with foil until ready – you will smell when ready).

Pasta (fussily), cooks for about 7 minutes on low covered in water, until ready to finish – can add salt (optional).

We added additionally pumpkin & sunflower seeds as an added nutritional bonus as garnish, salad, filling, colourful with loads of punch!

MEZZELUNE OKA

Half moon dumpling pockets, filled with butternut mix, topped with sauce dillon.

Serves: 4

Prep & cook time: 30 minutes

Difficulty: Easy

Ingredients: 

• 28 Pieces of dumpling dough (round)

• 1 Butternut, peeled, seeded, chopped

• Handful walnuts, lightly processed

• 2 Garlic cloves, chopped

• Nutmeg pinch

• Salt & pepper to taste

• Handful parsley, chopped

• Sauce dillon

• Cherry tomato, as garnish

Ingredients for sauce dillon:

• 2 T Oil

• 1 T Flour

• 1 Can coconut cream

•  1 t Salt

• 1/2 t Pepper ground

• Nutmeg pinch

• 6 T Dill, finely chopped

Method: 

• You will need to defrost your dumpling dough beforehand so, take out the freezer at least two hours ahead of time.

• Start with butternut filling. Boil butternut until soft, drain, then add nuts, garlic, nutmeg, and salt & pepper to taste. Hand mash. Reduce moisture consistency in the mix. The consistency of the mix should not be wet. Set aside.

• Lightly dust down counter with flour, separate dumpling dough, spoon butternut mixture to the centre of each circle using 1 T.

• Fold each circle over, then bind them together using the back of a fork, pressing down the edges. Cover with clean slightly damp dish towel.

•  Continue with sauce dillon. Heat oil in  pan, add flour, stir out any lumps, then add cream and the rest of the ingredients, stir.
